Pumpkin Cake with Cream Cheese Icing

This is one of my favorite holiday cakes.

cake ingredients:

  • 4 eggs
  • 1 2/3 cups sugar
  • 1 cup oil
  • 1 (16 oz) can pumpkin
  • 2 cups self-rising flour
  • 2 tsp cinnamon
Mix eggs, sugar, oil and pumpkin until fluffy.  Add other ingredients and mix well.  Bake in a greased and floured tube pan for 40 minutes at 350 degrees.

icing ingredients:

  • 3 oz cream cheese softened
  • 1/2 butter or margarine softened
  • 1 tsp vanilla
  • 2 cups powdered sugar
  • 1 cup chopped pecans or walnuts
Mix until creamy.  Stir in nuts.  Spread on cool cake.
