Quickie Chili

  • 1 lb ground beef
  • 1 (15.5oz) can  light red kidney beans
  • 1 (15.5 oz) can dark red kidney beans
  • 1 (15.5 oz) can pinto beans
  • 1 (14.5 oz) can diced tomatoes with green chilies
  • 1 cup ketchup
  • 1 cup water
  • 1 (1 oz) package chili mix
  • 1 small onion
  • 1 small green pepper
The ingredients may be altered to your preference to more or less of each.
    Brown and crumble ground beef in a large skillet (iron skillet is my preference).  Drain the ground beef then add onions, green peppers and chili mix.  Simmer about 20 minutes stirring often.  Put the remaining ingredients in a large pot and add the ground beef mixture.  Simmer for 30-45 minutes, stir as needed.  Top with shredded cheese at serving if desired.
